A margarita-esque cross pollination of dessert and spirits - deep fried tequila shots - has been invented by Amy Erickson at her food blog, "Oh, Bite It!". These melt in your mouth squares of tequila soaked sponge cake are something fun to serve as a drink snack hybrid at a summer party, or as an after dinner delight during any time of year. You may expect the atypical sounding treats to be a difficult one to make, but they are actually made with relative ease. CHECK OUT RECIPE BELOW! STEP ONE Gather all ingredients. -Tequila -Angel Food or Sponge cake -Oil for frying (canola or coconut) -Frosting -Lime zest -Lime wedges to serve -Powdered sugar STEP TWO Zest the lime and set aside. Cut the sponge cake into bit sized cubes but not too small. STEP THREE Use a fork and quickly dip the cubes into a shallow dish of tequila. Just remember the longer you dip the cubes, the more alcohol they will contain. Not too small, you want them about the size of a larger crouton. STEP FOUR Heat 2 inches of either canola or coconut oil in a deep pot to 350ºF. Then carefully fry the tequila soaked cubes until they are golden on all sides. We recommend tongs or a wire ladle/skimmer to fry and remove the cubes easily. STEP FIVE Let the cubes cool, best on paper towels to soak any extra oil. Dip or paint the shot glass rims with frosting and gently roll the rims into a shallow plate of lime zest.
